If you don’t want your tofu to crumble and fall apart, perhaps pressing tofu is a good idea. It was my first time doing it, and it yielded a nice, chewy texture. It was super easy. I took a block of extra firm tofu, and wrapped it in several paper towels. I then place the wrapped tofu on top of a cutting board. I placed a small cutting board on top of that and a heavy pan to press it down. The pan was sliding off, so I put an extra book on top to add some extra weight. Let it sit for 20 minutes, and you’re good to go!
