Cauliflower lends a nice nutty flavor and creamy consistency when puréed. In this version of garlic herbed mashed potatoes, we have added cauliflower and cheese to this holiday staple.
Why cauliflower?
Cauliflower is classified as a cruciferous vegetable, along with other veggies such as broccoli, cabbage, and bok choy. Regular intake can provide us with photo-nutrients and glucosinolates, compounds known to reduce inflammation and lower our risk for developing cancer. Not only do we get these anti-cancer nutrients, cauliflower also is rich in fiber which will keep us feeling full and satisfied. This low – calorie vegetable is rich in vitamins and minerals like folate and vitamin K.

Garlic Mashed Potatoes
Loaded with cauliflower, cheese and flavor, give this version of mashed potatoes a try!
Ingredients
- 5 pounds potatoes Russet or Yukon Gold
- 2 cups chicken stock fat-free, low sodium
- 1 package garlic herb soft cheese 5 ounces
- 1 head cauliflower
- salt and pepper to taste
Instructions

Wash, peel and cube potatoes. Wash cauliflower and cut into florets.

Put potates and chicken stock in Instapot. Place cauliflower on top of potatoes. Cook for 20 minutes.

Drain stock. Add cheese and mash. Season with salt and pepper to taste.

Recipe Notes
If you don't have an Instapot, try cooking in a slow cooker on low for 6 hours.
