Paleo Vegan Gelato Sandwiches

“Paleo” and “vegan” are not typically associated with a delicious dessert. Enter Sundara: she came to prove us all wrong.

We met Sundara at an event and tried samples of her gelato. They were delicious! They tasted even better after knowing they were vegan and 100% organic.

This is Vixen Kitchen’s story in her words:

“Vixen Kitchen Paleo Vegan Gelato is a labor of love inspired by my two girls Gigi and Lola. Like most kids, they love sweets. The problem came when I went to read the labels of some of their favorite treats. They were filled with junk created in a chemistry lab instead of a kitchen. So I created this gourmet vegan gelato that I’m confident will satisfy their cravings and my high standards-It’s both delicious and nutritious. It can be enjoyed daily without guilt and its 100% organic! The best part is it’s filled with simple wholesome ingredients even a six-year-old can pronounce. I have created a dessert that tastes amazing, but has the nutritional profile of a super food-densely loaded with minerals, vitamins and healthy fats.”

There are a variety of flavors to choose from: chocolate, vanilla, mint, coffee and chai. Something to suit every craving, we are sure!

Vixen Kitchen replaced the artificial fillers, gums and emulsifiers. Instead, they swapped those ingredients with wholesome food that you can feel good feeding your kids. We noticed they opt for fair trade when possible, yet another reason to love them!

The base of their gelato comes from cashews. Cashews are a good source of monounsaturated fats, the heart healthy kind. Traditional gelato is made with whole milk and cream, which are full of saturated fats. Excessive saturated fats increase your risk of heart disease, the opposite of heart healthy. Cashews are also a good source of magnesium and copper.

Vixen Kitchen uses 100% Organic maple syrup to sweeten the gelatio, instead of refined sugar. The nutritional benefit of maple syrup over plain, white sugar are the antioxidants it contains. Pure maple syrup also offers nutrients like riboflavin, zinc, magnesium, calcium and potassium.

The vanilla bean and organic vanilla extract are organic and fair trade. The organic cacao boast the antioxidants called flavonoids. For the chai flavor, they use organic, non-GMO verified rooibos chai, naturally decaffeinated and also high in antioxidants.

We took the vegan path a little further by making it a vegan gelato sandwich.

Vegan Chocolate Cookies

Perfect pairing for vegan gelato, try these cookies for a vegan alternative to the traditional cookie.

Ingredients

  • 1/2 Cup Vegan butter
  • 1/2 Cup Brown sugar
  • 1/2 Cup Maple syrup
  • 1 Tsp Vanilla extract
  • 3/4 Cup Cocoa powder Unsweetened
  • 1 Tsp Baking soda
  • 1/4 Tsp Salt
  • 1 Tb Soy milk Unflavored
  • 3.5 Oz Vegan chocolate chips
  • 1 Cup Flour

Instructions

  1.  Preheat the oven to 350°F. 

  2. Mix dry ingredients together: flour, cocoa powder, baking soda and salt.
  3. In a separate bowl, mix the vegan butter and sugar. Throw in the dry ingredients and mix. Add soy milk until you make a cookie dough. 

  4. Mix in chocolate chips. 

  5. Roll into small balls and space on a lined baking tray. 

  6. Bake for ten minutes. Cool. Enjoy as cookies or with Vixen Kitchen gelato for the perfect, vegan treat.
