Are you or your kids in a breakfast rut? Are bowls of cereal or toast the usual quick breakfast items you grab each morning? While quick and convenient, those type of breakfasts can often leave you feeling hungry by mid-morning.
Incorporating more protein and healthy fats into your breakfast will get your day started right and can also help keep you full until lunch. Yogurt can be an excellent source of protein, but not all yogurts are created equal. Unfortunately, many brands on the market are loaded with sugar, and their nutrition label reads like a dessert item.
Siggi’s to the rescue! We are huge fans of siggi’s for a variety of reasons. This brand of yogurt is made with simple ingredients, low in sugar and free from artificial sweeteners or milk with growth hormones. One serving of Siggi’s “icelandic skyr” style of yogurt utilizes four times the amount of milk as a regular cup of yogurt, resulting in a thick, protein-rich yogurt. It’s creamy and full of flavor. On average, Siggi’s has 40% less sugar and 60% more protein than the other leading brands. Only all-natural ingredients are used. Read: no high-fructose corn syrup, aspartame, sucralose, stevia, gelatin, artificial coloring or preservatives. Sadly, those ingredients are all too common in many yogurt brands. Since our kids love anything donut related, we whipped up these baked donuts with an unexpected ingredient of yogurt for a boost of protein and they were a hit. These were super easy to make, and the kids had fun helping out. Give them a try and let us know what you think!

Lemon Blueberry (Healthy) Donuts
A healthier baked donut rich in protein, and lower in sugar. Recipe makes a dozen donuts.
- 2.5 c whole wheat pastry flour
- 1/2 c pure maple syrup
- 1.5 tsp baking powder
- 1/2 tsp salt
- 1.5 tsp lemon zest
- 1/4 c unsweetened applesauce
- 1(5.3oz) blueberry siggi’s 0%
- 1/4 stick butter melted
- 2 eggs
- 2 tbsp lemon juice
- 2 tsp vanilla extract
- 1 c blueberries
Lemon glaze (optional)~ we added this when we served this as a dessert item, not as a breakfast item
- 3/4 c confectioners sugar
- 1/4 c lemon juice
- 1 lemon, zested
Preheat oven to 350F. Lightly coat donut pan with butter & flour to prevent sticking.
Mix together dry ingredients in one bowl and wet in another. Gently combine both sets of ingredients. Fold in blueberries at the end.
Spoon batter into donut pan, filling 3/4 to the top.
Bake for 10 minutes, or until a toothpick tester comes out clean.
If adding the glaze, whisk all ingredients together and drizzle glaze over cooled donuts.
