Lemon Blueberry (Healthy) Donuts

A healthier baked donut rich in protein, and lower in sugar. Recipe makes a dozen donuts.

  • 2.5 c whole wheat pastry flour
  • 1/2 c pure maple syrup
  • 1.5 tsp baking powder
  • 1/2 tsp salt
  • 1.5 tsp lemon zest
  • 1/4 c unsweetened applesauce
  • 1(5.3oz) blueberry siggi's 0%
  • 1/4 stick butter melted
  • 2 eggs
  • 2 tbsp lemon juice
  • 2 tsp vanilla extract
  • 1 c blueberries

Lemon glaze (optional)~ we added this when we served this as a dessert item, not as a breakfast item

  • 3/4 c confectioners sugar
  • 1/4 c lemon juice
  • 1 lemon, zested


  1. Preheat oven to 350F. Lightly coat donut pan with butter & flour to prevent sticking. 

  2. Mix together dry ingredients in one bowl and wet in another. Gently combine both sets of ingredients. Fold in blueberries at the end. 

  3. Spoon batter into donut pan, filling 3/4 to the top. 

  4. Bake for 10 minutes, or until a toothpick tester comes out clean. 

  5. If adding the glaze, whisk all ingredients together and drizzle glaze over cooled donuts.
